What's For Dinner Friday
I know, I usually do recipe talk on
Wednesday (“What’s For Dinner Wednesday” just
sounds better) but I made a new recipe yesterday and wanted to
share.
Before I share the recipe, you should know that I’m one of
those people who make lasagna from scratch. Yes, I’ve bought
frozen lasagna before – definitely not ashamed of that.
I’m just cheap, and like to add veggies to it. My stand-by
recipe is somewhat labor-intensive; I usually make a double batch,
which gives me two giant pans or two pans plus a small one, and
will spend a few hours doing the noodle-boiling and sauce-making
and so on. I love my lasagna recipe, but it is exhausting and takes
much planning.
This week, though, I tried a lasagna
recipe in my Wonder Time magazine (which is a great magazine, by
the way – slightly less commercial than most parent
magazines, even if it is owned by Disney) because it seemed to cut
a few corners. The verdict? A relatively fast make – using
the no-boil noodles and a pre-made sauce greatly cuts down on prep
time, and I was surprised at how well the cream cheese substituted
for my usual ricotta cheese. I can still easily add some cooked
spinach to the middle of it, and this freezes well – which,
as you know, I love. And best of all, I can keep all these
ingredients in either the freezer (meat, cheese) or pantry (sauce,
noodles) to be made quickly in case of “emergency”.
Start to finish, the recipe took just over an hour – half an
hour of prep work, and thirty-five minutes baking time.
